Kale, Mushroom & Lentil Empanadas 🇦🇷 From Mila to Buffy

Hola! This is a GUEST CHEF episode for Be Good Organics cooking school. I was invited by Buffy to be part of this genius serie and of course, my first thought was: let's make empanadas. What can be more 'Mila' than the classiest Argentinean meal.

Back home, these traditional empanadas are normally made with beef mince, but I twisted a bit -a lot- the recipe and made my mince with juicy lentils, kale and mushies. Man... this is WAY BETTER than the original ones. I promise you, meat-eater, you won't miss a thing.
